Best known for his celebrated restaurant Mirazur*** in Menton, Chef Mauro Colagreco has shone on the international stage, becoming the first non-French chef to achieve 3 Michelin Stars in France and his restaurant been awarded Best Restaurant in the World in 2019 (#1 with the World’s 50 Best Restaurants).

His daring and vision are reflected in his cuisine that transcends the seasons, always with instinct and generosity. With a deep connection to nature, Chef Mauro Colagreco is committed to preserving our planet and promoting sustainability through a Circular Gastronomy. In recognition of his environmental endeavours, he was the first chef to be appointed as a UNESCO Goodwill Ambassador for Biodiversity.

For his debut project in Hong Kong, Plaisance by Mauro Colagreco draws inspiration from his passion for the marine universe and its captivating biodiversity. These elements form the foundation of Plaisance’s interior concept, seamlessly bringing the fascinating and soothing marine ambience to the heart of Central. Chef Mauro Colagreco has appointed Mitsuru Konishi as the Executive Chef. Chef Mitsuru Konishi honed his skills in some of the world’s most demanding kitchens and is well-versed in Hong Kong’s competitive gastronomic scene. Chef Konishi earned two Michelin stars as Executive Chef at Wagyu Takumi in 2014 . In 2019, less than a year after Zest by Konishi opened, he earned one Michelin star.
